Discover my Slow Food
This website is a pedagogic exchange area between hotels highschools, wich objective is to promute the slow food, in link with near environement of each school.
P.S : the Slow Food is a international movement wich objective is to sensibilize the citizens to the ecogastronomy and altercomsuption. The locals productions, tecnics of fabrications, culture or the saniest breedings are promoted for a tasty, clen and fair food.
At the initiative of this website are two highschools : the hotel highschool « Quercy Périgord » in Souillac (France) and the European Center for Profesional and Continous Formation of Gubin (Poland). This project mean 25 years of french & polish cooperation between the Voïvodie of Lubuskie and the Lot, in domains like agriculture, tourims et hotel.
We hope that other hotel highschools will join us in the future to contribute to this website.
Promoting our region, the culture, the products in environment respect and the spirit of the
sustainable development become essential to prepare our profesional future.
On the other hand we must not shut in by speaking about our legacy. This is the meaning of this website : to exchange on ours skills through frontiers.
The region of Souillac, north of the Lot, is geologically formed by the Causses of Quercy, limestone plateaus of medium and superior Jurassic, with karstic reliefs. The Causse of Martel and the Causse of Gramat are separated by the Dordogne valley, from east to west.
The lands of this large valley are covered by fertile alluvium, wich, associated with water in the subsoil, historically speaking, make the region very agricultural :
-Vegetables (Quercy’s melon)
-Fruit (Perigord’s nut, constaded origine designation since 2001)
The landscape of this valley contrast with the austerity, the drought and the poverty of the limestone plateau’s ground. The causses leave room to a vegetal cover of dry meadow and woods. This ground’s poverty cause the presence of a flora essentially represented by the pubescent oak, wich quite large mesh allow the existence and the proliferation of Quercy’s black truffles.
The poverty and aridity of the causse only allow the breeding of the less required species :
– Ovine for meat production (Quercy’s lamb)
– Goats for milk then cheese production (Cabécous and constaded origine designation Rocamadour)
The Quercy’s vineyard (Côteaux du Quercy’s and Rocamadour’s wines), with a significally reduced surface, extend on the calcareous clay hills. Three different vines are planted : 1 hectare of Gamay, 3 hectares of Malbec and 5 hectares of Merlot.
